Simple Breakfast

Sometimes, the simpler the better.  My 8th grade art teacher used to tell us that ALL the time.  Mrs. Killian was probably my favorite teacher of all time!! Little did I know, that that saying pretty much applies to most of life (in my opinion).  So, breakfast was simple this morning.  Coffee and cream, dry toast and a fried egg.


These eggs are from chickens right next door!


AhHemm….ah yes, I did sneak those photos though knot-holes in the fence.  Lucky for me, I was able to receive fresh, organic eggs from the neighbors.


Check out this bread I found the other day!! Local bakery, 4 g fiber and 4 g protein per slice, I’ll take it! Anyone else check those stats before buying bread? Green Earth Baking is right here in Portland!  How cool is that!! I am anxious to try their other breads as well!

Just Go With Both!

Making eggs and toast for J and I yesterday, I was perplexed as to which nut butter I wanted. Well, I decided to go with both, cashew and Sunbutter, that is! Side by side, Sunbutter is still #1!


For lunch I had my smoothie in a bowl.  I think I prefer this route, if time allows of course.  Usually, my breakfast smoothie is sipped on my way to work.  Having it in a bowl seems like you are able to taste it better.

Smoothie: spinach, banana, blueberries, almond milk, hemp protein powder and peanut butter.

Toppings: Galaxy granola (cranberry orange) and hemp seeds


Time to back it up now.  I have been very relaxed about my blogging posts.  I guess you could just say, I have been taking it easy.  I do have some tasty bites to share though…


MY FAVORITE BURRITO IN THE WORLD

It might be safe to say that Chipotle make my favorite burrito of all! Sometimes my salsa choices vary, depending on how spicy I feel that day.  This day, it was black beans, rice, peppers, pico de gallo, cheese, lettuce, corn salsa and sour cream. Their chips are also dang good! Second, next to Juanita’s of course.


Then there was Easter. Everything was perfect!

turkey, mashed potatoes/gravy, sourdough stuffing, homemade rolls, bourbon sweet potatoes, gnocchi-pesto green beans


Even this ranunculus bouquet was perfect!


Wednesday, J and I made pizza. My pizza consisted of red sauce, mushrooms, pepperoni, spinach, mozzarella and tomato. The ways to create a pizza are endless. We are still working on finding a crust that we love.  This one, was one of the better ones.  It was too chewy though :( Still a fun dinner night :)

Rather than turning this in to a really long post I think I will wait to share a little more tomorrow.  I am going to go finish cleaning up my mess from doing yard work all day.  J should be home very soon, we are going for a bike ride! Can’t wait.  Hope today is lovely where you are!!

Bread Success

Today was a cloudy, dark rainy day.  Jason had a surprise day off, so we slept in and went to see a matinée.  Sherlock Holmes was great.  Any Robert Downey fans out there? :o I had a left-over burrito before we went.  That way I woudn’t have any popcorn or soda.  The key is to go full.  Afternoon snack was the heel piece of toast with some yogurt cheese and black cherry jam.

Since this was my last piece of bread I figured it was a good time to make a loaf in the bread machine.  I used this recipe.  The only ingredients I didn’t have were the amaranth and brown rice flour.  I just used whole wheat flour there.  Oh, and I didn’t have poppy seeds.


HOORAY! This is my first whole wheat bread in the bread machine where the top didn’t cave in. ;-) This bread really lives up to the title; “BEST.” This was for sure the best bread I have been able to make in the bread machine.  I will be making this again soon for sure.  Next time I want to get the missing ingredients though.

Cloudy days like today are perfect for making soup.  Well, actually any day is god for making soup if you ask me.


I started with soup’s usual suspects (carrot, celery and onion) sautéed with a little bit of olive oil.  Then I added vegetable broth and 1/2 a bay leaf. Simmered for about 30 minutes and added green beans, black beans and kale.  I stirred in a little bit of soy milk and browned tofu at the end.  Topped with carrot and beet shreds.  I had a little extra from the burritos.

I took yesterday and today off from my workouts.  I will be getting a good one in tomorrow.  Happy Friday!

Special Cookie Box!

So, as good as I may try to be with tempting snacks, this little box makes it difficult.


This special, little box holds the best baked good you could ever hope for!


Those sugar cookie put Lofthouse to shame.  I have been known to hide these from Jason….shhh. ;)


Tucked in that upper, right corner are my favorites; coconut creme puffs.  I’m not sure if that’s what they’re really called.  Trust me though, they are day-yam good!

Huh!  I stepped on something in the hall this morning….


Having grabbed the camera restored his interest in the helpless little bear again!

Just wanted to share what has been my favorite breakfast lately.

Fried egg with toast and Sunbutter. That is my sad looking bread machine bread.  The top of my loaves keep falling down!  I wonder if the temperature of the water I add is too hot for the yeast.  Crazy machine! Anyways, I think Sunbutter might just be my favorite nut butter. Plus, this breakfast will keep you full for hours. Sweet!
