Mochi and Some Facts

Well, I tried fixing the mochi a different way today.  Last time I baked it.  Today, I cooked it in a pan on medium heat with a little bit of olive oil.  Let’s just say it was GREAT!  I am officially hooked on mochi.


Lunch was a simple stir-fry with my now favorite, mochi.  I cooked a carrot and broccoli over medium heat with garlic and olive oil. Careful not to overcook the veggies.  stirred in a sauce that I made out of miso, water, lime and shoyu sauce then turned it down to low just till the sauce is warm.  After I turned off the heat I stirred in pecans and red bell pepper.  This was a great lunch.  I still have the stuff to make it again.  I’m thinking of a repeat tomorrow!


I don’t usually talk a whole lot about my exercise details here but this morning’s deserves a mention.  I borrowed Jari Love’s Extremely Ripped from Netflix.  Talk about a workout!!  I would highly recommend it.  Today was my first time with this disc.  I’m not sure who long it is.  All I know is that I didn’t eat a big enough snack to do more than one hour and 16 minutes.  I chose to stop and finish later when my form was right again.  I am convincing myself that I will get back to it this evening ;) Let me just say how happy I was to see these stats!

I could hardly wait to make breakfast after that little number.  I made oatmeal with raisins, pecans and hemp seeds.  It was very appreciated, I shall say.

So, now on to a more serious subject, who has seen Food Inc.? I finally watched it last night and am so glad I did.  Most of the information, I was already aware of but it was nice to have it reiterated and explained with some crisp facts.  I would like to take this moment to strongly suggest that everyone watch it.  My main reason is just to bring it to your attention.  If I was unaware of where my food was coming from, I would like if someone tipped me in the right direction.

A few thing to think about:

-Does it ever occur to you how fast food and some meat products can be so inexpensive?

-What do you think of when you hear E coli.?

-What about diabetes?

-What comes to mind, when you hear the term; factory farming?

I only bring these subjects up because I think it something that everyone should be aware of.  Knowledge is power, right.  I think if everyone was aware of what goes on and how our food is manufactured today they might be glad they knew.  Make your own decisions after you know the facts.

As of late, I have avoided eating any meat, dairy and eggs.  I prefer not to label, so I’m just calling it that.  This is such a controversial subject, my goodness.   Hope I didn’t offend anyone.  Just have to say what is very important to me.

Baby Chicks!

The last three days went by so fast!  Backtracking to Wednesday, I made the easiest stir-fry ever! I sauteed some broccoli slaw, chopped baby bok choy and yellow bell pepper.  Topped it with some teriyaki grilled tofu and peanut sauce.  The peanut sauce was: 2 tbsp. of peanut butter, 2 tsp. soy sauce, 1 juiced lime and water.  I didn’t add any sweetener because the peanut butter was already sweet.


I made some muffins this morning.  I’m not so sure I loved them though :(


They are pumpkin with cranberries and walnuts.  I made a few substitutions but otherwise follwed the recipe pretty closely. Unfortunately, not all recipes turn out great. So, my reason of solving this today, was some nut butter.


Cashew, to be exact!

I want to remake these with changes that I think will make them better before I share the recipe.  One problem was, the nutmeg.  I like  nutmeg, but there was too much in this batch!

I visited my cousin Thursday night, who currently has baby chicks!!!  In Portland, it is perfectly normal to raise chickens.  Cool, right? After hanging out around the cuteness Thursday, Jason is very positive that we need chickens as well!

Can you believe they just love to be held and fall asleep right in your hand!! Let me just tell you, it instantly melts your heart!

The weather has been beautiful yesterday and today! I am thinking some yard work is in order. Have a Beautiful Saturday!

Live in Your Strength.

I am sad to admit that it has been AWHILE since my last workout… I broke the dry spell tonight.  Jillian helped me with some trouble zones.  Oh yeah! I will be feeling this tomorrow.

I stopped on the way home to get some fresh veggies.  I love when I have so much fresh produce.  So, I declared stir-fry night. Stir-fry is one of the things that I will only make if I have enough time.  A lot of the time is involved in cutting all the veggies.


While I prepared the veggies I pressed some tofu.  I cut it up into cubes and tossed it in a bag with some flour.  Then I fried them in the wok with coconut oil.


On one of my last trips to Lily Market I picked up some fun looking mushroom.  Tonight, I finally used them.


I cooked all the veggies in the wok with more coconut oil and added the mushrooms and water chesnuts. I had a cheater sauce mix packets.  But I did not mix it with sugar. I used 2 packets of stevia and served it all on some brown rice.


YUM!!

One more thing that found its way into the cart tonight was Yogi tea-Tahitian Vanilla Hazelnut. I had planned to stick to my list but in this case I am so glad I didn’t! You must try this one.  It might be one of my new favorites.

It is only me that can make the changes to get me where I want to be.  This is my journey.  I might have help and support (which I am very grateful for) but it’s all me, who must discipline and stay dedicated.
