Just Go With Both!

Making eggs and toast for J and I yesterday, I was perplexed as to which nut butter I wanted. Well, I decided to go with both, cashew and Sunbutter, that is! Side by side, Sunbutter is still #1!

For lunch I had my smoothie in a bowl.  I think I prefer this route, if time allows of course.  Usually, my breakfast smoothie is sipped on my way to work.  Having it in a bowl seems like you are able to taste it better.

Smoothie: spinach, banana, blueberries, almond milk, hemp protein powder and peanut butter.

Toppings: Galaxy granola (cranberry orange) and hemp seeds

Time to back it up now.  I have been very relaxed about my blogging posts.  I guess you could just say, I have been taking it easy.  I do have some tasty bites to share though…

MY FAVORITE BURRITO IN THE WORLD

It might be safe to say that Chipotle make my favorite burrito of all! Sometimes my salsa choices vary, depending on how spicy I feel that day.  This day, it was black beans, rice, peppers, pico de gallo, cheese, lettuce, corn salsa and sour cream. Their chips are also dang good! Second, next to Juanita’s of course.

Then there was Easter. Everything was perfect!

turkey, mashed potatoes/gravy, sourdough stuffing, homemade rolls, bourbon sweet potatoes, gnocchi-pesto green beans

Even this ranunculus bouquet was perfect!

Wednesday, J and I made pizza. My pizza consisted of red sauce, mushrooms, pepperoni, spinach, mozzarella and tomato. The ways to create a pizza are endless. We are still working on finding a crust that we love.  This one, was one of the better ones.  It was too chewy though :( Still a fun dinner night :)

Rather than turning this in to a really long post I think I will wait to share a little more tomorrow.  I am going to go finish cleaning up my mess from doing yard work all day.  J should be home very soon, we are going for a bike ride! Can’t wait.  Hope today is lovely where you are!!

Pizza Night!

Have you entered the GIVEAWAY?

What a rad weekend! J and I rarely have the same days off.  Somehow, as luck would have it, we had yesterday and today off! SWEETNESS! His request; pizza night! I had the idea to trying a gluten free pizza crust.

Olive oil and 4 cloves of garlic made up the base!

about 1/4 cup of mozzarella, spinach, shitake mushrooms, and tomatoes

Complete with parmesean and red pepper flakes

Oh, it was soo good. I am not sure I am sold of the crust though.  Anyone else tried the gluten free crust?

This morning’s juice was 1 grapefuit, kale, apple and carrot.

You will have to excuse the compost bowl in the background…oops.

The day is beautiful and sunny :D Some lawn needs mowed, weeds need pulled and some seeds need planting.  Be back later ;)

You Bet I Did!

So I have heard a lot of talk about Mae’s pizza. Heather has raved about it! Jason mentioned pizza night, so I looked no further for ideas than Mae’s recipe.  I made hummus and put the dough ingredients in the bread machine, then did a Jackie workout.  By the time I was done, so was the dough.

whole wheat dough, pizza sauce, hummus with nutritional yeast, zucchini, mushroom, orange bell pepper, spinach, grape tomatoes and artichoke heart.

I almost forgot about the tahini sauce.  This might be the best part!

Ohh May!
You are a genius.  This recipe needs to be hand written on a cute card and put in the actual recipe BOX! LOVE, LOVE, LOVE! Who needs cheese!

Just a quick post tonight. I want to check out myfooddiary.com.  stumbled upon it while reading @ orange truffle. Anyone used it?

Pizza Night Success

I haven’t been very impressed with the bread results from our bread machine.  I guess even though it takes a lot more effort, I would rather make it myself.  As for making pizza dough, it is the best.

The base was cream cheese mixed with pizza sauce and lots of fresh garlic. (love that stinky stuff).  toppings: spinach, mushrooms and tomato.  After it was cooked, I added a little bit of parm and peppa.  One of my favorite ways to have pizza is with white sauce. Oh yeah, alfredo, however, I don’t see that stuff finding it’s way into my weight loss plan. The crust was whole wheat btw.  I was a fav! and I will declare pizza night again soon.

While I made the pizza, I sipped on some off this.

It was pretty good.  It’s only the second flavor I’ve tried.  It was like a treat, they’re kind pricey.  Besides, I don’t usually drink sweet stuff.  Wanted to drink it for the benefits though.

Time for a workout.

I leave you with one of my favorite Christmas decorations….

Glorious

Glorious, was the veggie pizza from Pizza Hut last night! Yikes, what was I thinking :( I was not feeling so glorious afterwards when I was thinking of all the calories I had consumed.

This morning was for making up. I ate great all day: light and clean. I made it to the gym for 40 minutes on the elliptical and 30 minutes of arms and abs. I actually wasn’t very hungry after, so I used that time to hit up Trader Joe’s (GLORIOUS). Well, budget made me stick to the must have(s) only.

Oh My!!!!!!!!! Eggplant hummus! Are you kidding me right now? I am going to make my own this weekend. Not that this one isn’t perfect or anything. I just have a feeling that it will not last very long.
I have found an even better way to enjoy the awesome superfood….

I mixed 8 ounces of almond milk with one scoop of superfood and 2 oz of cold coffee. Vaaay Niiice Gypsy! Vaaay Niiice!

I want to share this glorious idea that Nicole @ HealthyChow came up with! It’s about meeting 5 new bloggers every week in December, leaving a comment and sharing about it on your site. It is fun and it touched me today when she gave me a lil shout out. Sometimes it is just as nice to make someone else’s day as it is when your day is made. Did that come out right? Well, I think you get what I am trying to say. So, why not give it a try? Thanks Nicole! :) Oh, and do be sure to check out her amazing potato and sun dried tomato au gratin with spinich and cannellini beans!

In case anyone was curious about the wheat berry/wild rice salad, here is the recipe.

Red Wheat Berry Salad

Ingredients:

1 cup hard red winter wheat berries, soaked overnight
1/2 cup raw wild rice
2/3 cup toasted chopped pecans
1 cup dried cranberries
1/2 cup chopped fresh parsley
1/2 cup chopped green onions
3 tbs fresh lemon or lime juice
1 tbs honey
1 tbs dijon mustard
1 tsp kosher salt
1/2 tsp ground black pepper
Preparation:

Soak the wheat berries overnight in cold water, covering them 3
inches. Drain the water in the morning.
Boil the wheat berries in 6 cups of water for about 50 to 60 minutes,
or until tender. Add more water as necessary to keep wheat berries
covered during cooking. Drain excess water from the wheat berries when
done.
In another small pot, boil 2 cups of water. Add the wild rice and
simmer for about 45 minutes, or until the rice begins to split. I
prefer to undercook the wild rice slightly so that it retains some
structure. Drain excess water.
Combine the cooked wheat berries and wild rice in a large bowl.
Whisk the lime juice, honey, mustard, salt, and pepper to make the
dressing. Add the dressing to the wheat berries and wild rice, mix
thoroughly.
Now add the cranberries, pecans, parsley, and green onions and combine
well.
(I cut the whole recipe in half)

**Alright, now go check out 5 new bloggers!
