You know those days when you don’t get up in time to properly get ready for the day…Well, that was me on Wednesday. My back was so dang sore that everything I did, just happened at a slower and more painful rate. I did not fix a lunch for work the night before and told myself I would do it in the morning. HA! Well, I didn’t even manage to make much of a breakfast. So, it was a “lunch out day.”
It just so happens, there is an amazing Thai food restaurant down the street. Green curry it was! I have a hard time ever ordering anything else when I go there, it is that good! I asked for their black rice which is so good and nutty. The tofu was fried, whoops! I forgot they do that. The eggplant was the best part!

I made breaded-baked chicken tenders the other night. I haven’t made chicken in a while. The cats were going nuts! I wasn’t as into it as I thought. No worries, J loved it! I did like the oat groat pilaf though. Simple recipe on the back of the Bob’s Red Mill bag.

Lunch today was more like a late breakfast. I started the day late and before you know it, it was 3:00! Just taking the day easy today. Those can be the best days!!

oats with almond milk, Jay Robb vanilla rice protein powder, walnuts, raisens and cinnamon
topped with black cherry jam and cinnamon raison swirl, peanut butter!

2 eggs and cheddar all wrapped up!

Skipped the coffee this morning and replaced it with some juice. I swear, it gives you the same feeling, only better.

That is really a monster carrot! They are Italian carrots-cool huh.

I made oats before my workout so they would be ready after. I have really been enjoying making overnight oats (no-cook), this was similar, only 2 hour oats. ![]()

1/4 cup dry oats, 1 scoop of Amazing Grass-Superfood, 1 scoop of Chocolate Biochem protein (thanks April!), 2 tbsp. of ground flax, dried fruit/nuts, unsweetened coconut and cinnamon mixed with half a smashed banana and almond milk. Today, I added the juice from the bottom of the pitcher. It is usually foamy…ehhh. Depending on my mood, I may or may not drink that part. So in the oats it went!

After my workout and a shower the oats hit the spot, with some almond butter, that is.

It was a beautiful, sunny (for the most part) today. I am not the only one that loves the sunshine…

I picked up a mysterious winter squash at the store a while ago.
I wasn’t sure what I wanted to do with this one, so I sliced and baked.

It was just ok. The sweet dumpling was way better! The other part of my dinner was better though.
Massaged kale with lime and salt, tahini/yogurt dressing, grilled tofu, yellow pepper and grape tomatoes.

Jason’s other favorite dinner would be fish tacos. It is one of mine to, I just don’t request it EVERY week.
I pan grill tilapia with lime and seasoning. After it is cooked, I break up the fish and add more lime juice. (lime juice MUST be fresh squeezed) Sprinkle with light bread crumbs and chili powder. Shredded cabbage, tomatoes, and avocado. The sauce is simple: sour cream, lime juice and sriracha. The beans are plain pintos heated in the pan and mashed with….more lime and a lil salt. That is it. Easy, simple, delicious.
Last night was my Friday, so I enjoyed it staying up late with my new favorite Netflix. DEXTER! Gal! I am only in season 2. I am hooked. Must I admit we blew through a whole disc last night! (4 episodes) No regrets though. Dexter is crazy entertaining.
Sun is shining, it is a beautiful day! Breakfast oats were a little of a lot: 1/4u77777777 (that was Gracy stepping on my keyboard!) Anyways, like I was saying… 1/4 cup of oats cooked, 1/4 cup grape nuts, small scoop vanilla protein powder, pumpkin pie spice, almond milk, fresh cranberries (slow baked in the oven last week), coconut shreds and walnuts + almond and pumpkin butter on top.!
Crymanie! I told you it was alot! It was so good though. Tis all for now gotta gets to the gym!

Oh my! So, the Trader Joe’s eggplant hummus inspired me to make my own. I am so glad I did. Roasted 1 whole eggplant and cooked some chick peas. Into the food processor went: chick peas, 1 1/2 juiced lemons, 2 cloves of garlic, 1 1/2 tbsp. tahini, salt and pepper. Didn’t seem to need any olive oil because of the moisture from the eggplant.
I have some Ezekial wraps which actually seem to hard and dry to “wrap.” This has been my second package like that. Not sure if that is normal or if they are old when I buy them. Baked in the oven with olive oil, salt and pepper makes perfect chips though.
Sometimes snacking plates make the best dinners!
I also made a rhubarb, strawberry and raspberry pie for my husband. We had a garden this summer and grew rhubarb. He loves the stuff! Can’t say I do. We cleaned and cut a bunch of it and froze it. He has been asking, so I finally gave in.
