Yoch Digs Buttercup

A while ago I cooked a buttercup squash and discovered that two out of the three kitties liked it.  I wasn’t actually planning to give them some because if you know one thing about cats, it is that they are finicky eaters.  Well, when I took it out of the oven and was scraping away thee skin, Yoshi and Choopey were at my feet just staring up at me, begging.  So, I put some in their dishes and was amazed at what I saw…

Little Yoch actually had seconds!


I know I have talked about how much I like massaged kale but I must tell you at least one more time.  I made this one with avocado, lemon and salt.  I promise you, it is fabulous :)


The combination of this dinner is one I might just have to duplicate the exact same way.  Yup, it was that good.  Avocado-massaged kale salad+ buttercup squash with tahini+ tempeh= perfect.

You know how I talked about kitties always wanting to get in the photos, well it didn’t fail this morning.

I almost forgot to mention the tasty zucchini muffins I made from ED&BV.  This morning I toasted them under the broiler in the oven. Let me just tell you about a really rad memories real quick.  My mom used to make the most fabulous sourdough biscuits (one of the best foods I have had in my whole life) and we would toast them in the oven this way.  Told you it would be real quick.  Have a great night :)

Slow & Steady

How is it possible that Sundays seem to go by the fastest out of all days is the week!! That is what mine is doing today, anyways. I did make some tasty muffins this morning though. In the spirit of Fruit Not Fat; applesauce has replaced the butter.

Banana Nut Muffins

3 ripe bananas

1/4 cup baking stevia

1/2 cup applesauce

2 T of flax meal+ 4 T water

1 t pure vanilla extract

1 t cinnamon

1/4 t salt

2 cups whole wheat flour

1 t baking powder

3/4 t baking soda

4 T warm almond milk

1/3 cup of Galaxy granola

1.) Preheat oven to 350. add flax meal to water in small bowl and let rest.

2.) In large bowl, mix mashed banana, applesauce, stevia, vanilla extract, salt, cinnamon. Add flax and water mix, and mix well.

3.) Add flour and baking powder and mix till smooth.

4.) Warm the 4 T milk in seperate bowl and add 3/4 t baking soda.  Stir into batter and mix well.

5.) Scoop batter into prepared muffin tin, top batter with a sprinkling of granola and bake for 20 minutes. (this time will vary, depending on the size of your muffin tin)


Isn’t it funny, how sometimes the best tasting foods and meals are not the best looking.  Well, my smoothie yesterday might just be my favorite to date and it wasn’t that pretty!!

So, slow & steady goes my day.  It is time I head to the gym and test out my new playlist.  Adding good music every once and a while definitely helps with a good workout.

Baby Chicks!

The last three days went by so fast!  Backtracking to Wednesday, I made the easiest stir-fry ever! I sauteed some broccoli slaw, chopped baby bok choy and yellow bell pepper.  Topped it with some teriyaki grilled tofu and peanut sauce.  The peanut sauce was: 2 tbsp. of peanut butter, 2 tsp. soy sauce, 1 juiced lime and water.  I didn’t add any sweetener because the peanut butter was already sweet.


I made some muffins this morning.  I’m not so sure I loved them though :(


They are pumpkin with cranberries and walnuts.  I made a few substitutions but otherwise follwed the recipe pretty closely. Unfortunately, not all recipes turn out great. So, my reason of solving this today, was some nut butter.


Cashew, to be exact!

I want to remake these with changes that I think will make them better before I share the recipe.  One problem was, the nutmeg.  I like  nutmeg, but there was too much in this batch!

I visited my cousin Thursday night, who currently has baby chicks!!!  In Portland, it is perfectly normal to raise chickens.  Cool, right? After hanging out around the cuteness Thursday, Jason is very positive that we need chickens as well!

Can you believe they just love to be held and fall asleep right in your hand!! Let me just tell you, it instantly melts your heart!

The weather has been beautiful yesterday and today! I am thinking some yard work is in order. Have a Beautiful Saturday!

Trouble Zones, Check!

One of the best things about my day today, was when I completed Jillian Micheals, No More Trouble Zones.  I pretty much enjoy all of her workouts, but I will admit they are tough. I usually find myself counting down the time until it’s over. It’s not that I don’t enjoy the workout, it is just that they are still pretty difficult for me.  Today I was in the zone and enjoyed every bit of it.  In fact, I was amazed when she said it was time for stretching! What? I was ready to do two more circuits. This was the greatest feeling! I did actually do one more circuit on my own for arms and cardio.

I made Squirrelly Scones out of Vive le Vegan! this morning. I subbed whole wheat flour for the barley flour, used stevia in place of sugar, agave syrup in place of the maple syrup, semi-sweet chips, and 4 tbsp. of apple sauce in place of the canola oil and didn’t have pecans. Sheesh, I didn’t realize I botched the recipe up that much until I wrote all that out.


After my workout I made lunch.  I have wanted to try cashew cheese for a while, so I looked up a notable recipe. I was so inspired by her delicious wrap that I also made one.  I blanched my collard leaves a bit though.


I also had some leftover, grilled tofu.


OH MY GOODNESS! This was perfect! I like how tart it was, from the lemon.  Do, check out Gena’s website.  So much knowledge and super recipes!

The rest of my Sunday was low-key.  Spent the afternoon reading blogs, doing laundry and even made granola.


I wish everyday could be Sunday.  Well, and that Jason could be off on Sunday too.  Usually, he gets off early, so that is a bonus.
