Happy Birthday Mom!
Today is my Mom’s Birthday. I am missing her very much. Long distance can be very hard sometimes. I have so much to thank my Mom for. She is the one who taught me so much of what I know today. In fact, it is she who taught me the values of eating well. I remember Kraft macaroni and cheese being one of my favorite junk foods of all times. It was a treat! Not something that was ever stocked in the house. Ha!

Happy Birthday Mom! Thank You for being by best friend… I love You soooo Much.
Yesterday I made the millet bread; inspired by HEAB. I really enjoy this bread. Last time I made it, I used half millet and half quinoa. I think I like that version a little better. I also tried it with oat groats. The quinoa and millet is my fav! It tastes great with a salad or with any nut butter. I will be making this bread more in the future. Thanks Heather!

Last night we made a rotisserie chicken for the first time. Let me just say, it will not be the last. It was so good. It was a free range, organic chicken. So worth the extra cost.

A splash of wine went well with it too.

Today is a day of Giving Thanks. It is easy to lose sight of the things that matter most or take for granted the very matter that makes our lives wonderful. I have a tendency to dwell on the negative and complain too much. Sometimes when I am trying to “vent” about these random things to my husband he will stop me and give me perspective. “Thank you Jason!” Although, sometimes I just want him to agree with me and take my side, right…. He will remind me of what is good and tell me what he is thankful for. He really helps keep me balanced.

I tend to worry a lot. Well, who doesn’t right. Worries of money, missing long distance family and friends, time, health and weight, success, cleaning, yada, yada, yada. If we don’t enjoy what we have, how will you ever know?
Today is a day to just enjoy the little things that make our lives happy. Think of a list of all that you love in your life……. WOW! When we really stop and think about it, it’s great! There is so much to be grateful for.



Family is my number one. The rest goes on and on. I hope you all have so much to be thankful for today. Enjoy your day wherever you are or whatever your plans are. Have a Happy Thanksgiving.
