Breakfast, Lunch or Dinner??

To be honest, this is what breakfast usually looks like.  What can I say, I am hooked.  Usually it is regular quinoa though.  The red is fun too, but I think I like the plain better.  Then I mix it with steamed greens or broccoli, nutritional yeast and a tiny bit of tamari.

Hey don’t knock it, till you try it.

Anyone else make “out of the ordinary” breakfasts?

Oh My Alfredo!!

Growing up, I would always order alfredo sauce pasta when out at an Italian restaurant.  I don’t even want to think about the amount of fat, calories and cholesterol were in those dishes.  As I became more aware of health I stopped ordering it, knowing how guilty I would feel for all the fat I was eating.  Not to mention the usual stomach ache that would follow.  Now, having given up all dairy products, it seems that alfredo sauce would be dead and gone as an option for sure.  Nope, think again.  The other night I was falling victim to the gooey pasta dish craving.  So I searched for a non dairy alfredo sauce on VegWeb and made this simple recipe.  I actually forgot to add the butter, as it forgot to mention that step and I think it wasn’t even needed.  I might add it next time I make it. I served the pasta and sauce with roasted brussel sprouts, broccoli, tomatoes, green beans and Trader Joe’s meatless-meatballs.


This sauce was fantastic! I highly recommend you try this recipe for yourself!

Special Day

Best news in a while! I finally geared up and got to the gym yesterday.  I admit, it has been since before Christmas that I was last there. I enjoy my home workouts and feel I get a good workout.  I just think it’s nice to balance the two.  Since it has been about a months since my last gym visit, it has also been a month since I last wore my iPhone arm band.  I announce, it was LOOSE !! Yay! I think that gave me an extra bit of energy during my workout.  So did this:

Just a bit of my granola with almond milk. I know some of you don’t care for the elliptical but I love it! I spent 35 minutes on it and burned 523 calories! I was so jazzed that I then did 15 minutes on the stair master and then arms. I love when gym days go like that.  That is why I like to balance my workouts with gym, home and outdoors. It keeps each activity exciting.

Dinner was zucchini, kale and broccoli with tahini-yogurt dressing, tempeh with tahini and quinoa.  It took maybe 15 minutes to prepare this dinner and I loved every bit of it!

Just a quick post today.  It is my Birthday and I think the day is going to be jam packed! Road trip! Enjoy the weekend!

Fire Face! Eeeh!!

What the crapadoo!! Does anyone else get “fire face” when they work out?? I have my whole life.  Sure, it wasn’t as bad when I was in better shape, but it would even then, still get way red!


This is a very modest shade of red.  I am not that comfortable yet to reveal my full-blown fire face.  This was due to 30 day shred 2!! Jillian can be so mean! and that is exactly why I heart her! :-P

I ate clean today! Breakfast was juice and 2 hours later oats with cinnamon, stevia and almond butter.


Lunch was leftover stir-fry and green grapes for mid afternoon snack. Lots o water was consumed as well.  Actually, that is easy peasy for me.  I love, love, love water!

Tuna, broccoli and harvest grains were for dinner. oh yeah, and the sauce on the tuna is blended cilantro, garlic and lime juice.


The harvest grains are way too cool.  I put them on my Trader Joe’s list after I saw Sarah prepare them. I added artichoke hearts, sun-dried tomatoes, garlic, lemon juice and zest after it cooked; done and done. This meal was quick! This is actually Jason’s plate.  I had half of my tuna (saved the rest for tomorrow) and less grains.

Gotta scoot.  Much to still do and it’s already after 9:00! It’s almost my bedtime

Circles for Dinner

Really? Yes, I made circles for dinner.  Seemed like a good idea at the time.

I used Trader Joe’s polenta and Classico marinara.  Steamed some broccoli and grilled some eggplant.  It seemed to fit just right.

The verdict: it was not! :( I think my eggplant was a little old, so it was bitter.  The Classico sauce was ick!  That’ what I get for buying cheap huh.  I give it a 4 out of 10. I did not finish this plate! The polenta was great though.  I had two more pieces just plain. I think it tastes perfect with nothing on it.

…Just Kidding :)  This is the breakfast that my cousin, Ehren fed his backyard birdies on Sunday. Isn’t that the coolest!

So I am kinda of a brat.  I whined a little about my flop of a dinner to Jason.  I maybe said some stuff like, “I wish I had some ice cream right now.”  Or maybe I said, “can you go get some ice cream!” I can’t remember.  Anyways.

Oh yes!!!! The mother lode!!!!! I admit it though.  I flopped! I fell off the band wagon tonight.  Sun of a bi@%h! I promise to correct my sinful ways tomorrow though.  Hey, at least I am being honest and posted it.  I will eat clean and workout hard tomorrow.  We are going to the gym together. BTW, it was nutty coconut and chocolate brownie. :)

Thought for the day: When dinner fails, dessert prevails!
