So, I had heard about these Joe Joe cookies from Trader Joes and was told they were they best! Oh, sure, what-ev. Well, I picked some up at Christmas time and had no idea that I had made a mistake when I didn’t buy a case! I cannot begin to explain how much I adore these little trouble makers! Last night the very last one left is now no more
breaks my heart a little.
To make it worse, it’s not like I can simply go buy another box. That is, not until Christmas again. I have come to the conclusion that I must make some peppermint bark with Oreos. I am thinking that will be my birthday treat next weekend.
Dinner last night was random.
I was craving corn tortillas and Cholula sauce. Some how it led to this. It was great!
I have wanted to try HEAB’s protein pancakes for a while now. This morning, I made it happen.
I followed her recipe exactly. I used Jay Robb’s vanilla rice protein powder and added about 1/4 cup of wheat germ. They were filling for sure. I have some leftover still. As you may guess, Jason wasn’t convinced he wanted any.
A while later I did Jillian’s-Boost Your Metabolism. Dang! My goal is to be able to do this all the way through with ease. That, my friends, was not today. One day though, BELIEVE.

Chocolate covered Joe Joe’s sound divine! At least you have a TJ’s near you! The closest one to me is about a 4 hour drive… some days I’m tempted to take the trip just for TJ’s

I think Nabisco or Oreo does make chocolate-mint covered cookies! You may like them! They remind me of mint girlscout cookies, but thicker! I cannot find them on the internet right now though
I hate it when I find something wonderful at Trader Joe’s and it ends up being a seasonal product! I bought this package of four absolutely delicious giant chocolate chocolate chip peppermint cookies at Trader Joe’s sometime in December and they were so good…but then they were gone.
I learned my lesson and stocked up on the pumpkin pancake mix before it disappeared, too.
Yes, I have to agree, those cookies are ridiculously good. Maybe you could take regular Joe Joe’s and dip them in melted chocolate that has some peppermint extract in it? If you have any candy canes leftover then crush those up too!
Paula, Thank you for leading us toward more healthy choices.Thanks for the pancake idea. We have been using Bob’s Red Mill gluten free pancake mix, however ,his has corn flour and corn starch. I am going to try the idea of the rice protein powder, only see if I can maneuver it into a pancake without any of the top 5 food allergens: gluten, egg, corn, dairy, peanut. And since Brandi informed me that soy is also one of the big food allergens, I am going for almond and rice milk.
I will refer to the Babycakes cookbook for help with this project. Ehren McKenna is a food genius.
